Coca-Cola Cake Recipe, the Right Way!

Hi all! As promised, here is the correct recipe for Coca-Cola cake. I should know better than to try to do 100 things at once! Please do try it, I think you'll love it! TTFN.

Coca-Cola Cake

Ingredients:

For Cake:

1 C Coca-Cola
1/2 C oil (again I use Wesson best blend)
1 stick butter
3 Tbsp cocoa
2 C sugar
2C flour
1/2 tsp salt
2 eggs
1/2 C buttermilk
1 tsp baking soda
1 tsp vanilla

For Frosting:

1 stick butter
3 Tbsp cocoa
6 Tbsp Coca Cola
1 tsp vanilla
1 (16 oz) package powdered sugar

Preheat oven to 350. Grease and flour (well, I use extra cocoa) a 9x13 pan.

In a saucepan, bring Coca-Cola, oil, butter and cocoa to a boil. In a seperate large bowl, combine the sugar, flour and salt. Pour the hot mixture over the flour mixture and beat well (again, I use my KitchenAid). Add eggs, buttermilk, baking soda and vanilla and beat well. Pour into your prepared pan and bake fro 20-25 minutes or until done. Cool on a wire rack while making the frosting.

To make the frosting, in a saucepan, combine butter, cocoa and milk. Heat until butter melts, then beat in the other ingredients (for this, I just use a hand mixer). Spread this warm mixture on the cake when it's just cool to the touch

Where Did the Time Go?

Hi all and a happy Monday to you! I can't believe I haven't posted anything since Thursday!!! I had a migrane that lasted for two days and basically felt horrible. Then I had to make up for all the down time. One thing I did do this weekend was make the Coca-Cola cake I posted here the other day AND realized I totally screwed up the recipe. I will repost it tomorrow correctly. That's what happens when you are doing too many things at once. Okay, slow down and breathe...

I really need to find a few minutes to post pictures from Eldest Daughter cheering and Eldest Son's football games. Hopefully, Wednesday. Which brings me to what I'm doing whenever I find a few free minutes. I'm going to start reading the "Blind Side." Yes, I've seen the movie and it was great. That being said, I much prefer reading and look forward to the story. After I finish it, I will also be reading "In a Heartbeat: Sharing the Power of Cheerful Giving," which is written by the Touhy's. I'm very excited about both and look forward to telling you about them.

Did you Know This About Music Cards?!

Hi all! Well, I learned something new today and wanted to share it with you. While not earth shattering, I believe it is quite useful knowledge.

With so many music cards on the market, I'm sure most of us (or at least our kids) have received one. Well, did you know the post office charges extra for these cards? And, if they do not have the extra postage they may very well return them! It's not becasue they weigh more or have a different shape. It's because they require more labor by the post office. These cards can NOT be run though the machines. If they are, the cards will NOT work! So, here's the advice I was given: if at all possible, take these cards to your post office or mail center. If not, add an extra stamp and write "Hand Stamp Only" on the card. That way, your card won't be returned or, worse yet, ruined.

Just thought I would pass this little tidbit on. Now, you can add it to all the "useful" trivia you have stored in your brain, as well! TTFN.

Tied to the Cause

Hi all and a Happy Tuesday to you! I swear, I don't know where my Monday went. Well, I know at least two hours of it were spent at the doctor's office with Eldest Daughter. Don't worry, she's fine. We just had to wait and wait. You know how that goes.

Today I want to tell you about Vineyard Vines and it's support of the Leukemia and Lymphoma Society. This month, they are supporting this organization through their tied to the cause program with these two adorable ties,

as well as being a national sponsor of the Luekemia Cup Regatta series.

This means a lot to me, as DH's best friend was diagnosed with non-Hodgkin Lymphoma a few years ago and has successfully completed treatment. He is as healthy as can be and owes that to great doctors and treatments with research funded by the Leukemia and Lymphoma Society. So, go check out the ties and the Regatta series. Coca-Cola Cake Recipe

Hi all and a Happy Friday to you!! Well, I figured I would keep the cake recipes going and, for today, I present you with a recipe for Coca-Cola cake. I make this cake for a neighbor and she simply adores it. She says it makes for a very moist and rich choclate cake. I don't eat the cake, as I can't deal with the extra caffeine. I've considered making it with caffeine-free Coke, but just haven't yet. TTFN.

Ingredients:

Hummingbird Cake

Hi all! Sorry my posts are a little scattered this week, but between the holiday and Ittybit starting a new year of preschool, I feel so far behind! I've been promising this for a while and finally had the time to sit down and post. For those of you who asked, here is the recipe for Hummingbird Cake -- with a few pictures of the family, of course! This was the cake Eldest Son requested for his birthday. TTFN.

Hummingbird Cake

For the Cake:

cooking spray
3C (plus a little for dusting) all purpose flour
1tsp baking soad
1 tsp salt
2C sugar
3/4C vegetable oil (I use Wesson best blend oil)
3 large, ripe bananas, chopped
1 (8oz) can crushed pineapple with juice (I only use Dole)
1-1/2 tsp pure vanilla extract
1tsp ground cinnamon
4 large eggs, beaten

For the Frosting:

1 pound (1 box) powdered sugar
1 (8 oz) package cream cheese at room temperature
3/4 stick butter, softened
1tsp pure vanilla extract

Preheat oven to 325 and spray and flour three 8 or 9 inch round cake pans. Tap out excess flour.

In a large bowl, combine all the ingredients for the cake. I tend to use my KitchenAid to make sure all ingredients are incorporated without breaking up the pineapple and banana too much.

Divide among the three pans and bake for about 30 minutes. If using more than one rack, make sure to rotate cakes halfway through for even cooking. Cakes are cooked when the tops spring back after being lightly gently pressed.

Cool on wire racks for about 10 minutes in pans. Remove cakes from pans and let cool completely, top side up, before frosting.

For frosting, combine all the ingredients in a bowl and beat until creamy. You can add milk for your desidred consistency, but I don't use any.

Use about 1/4 of the frosting on the first layer, 1/4 of the frosting on the second layer and the remaing frosting for the rest of the cake. Makes a beautiful three layer cake. Enjoy immediately or refrigerate until ready to eat. Bring cake back to room temperature before serving.

Note: You can also add pecans or walnuts to the cake and/or the frosting, but we opt not.

Eggplant Parmesean for a Friend

Hi all and a very Happy Friday to you! For today, in honor of fall (and as a special request), I've decided to post my eggplant parmesean recipe. It's so easy and so good. Nothing like comfort food in the fall, or anytime you're feeling down. Now, please understand, this isn't a healthy recipe -- well, it does have vegetables! Kind of like saying fired fish is good for you. Hope you all enjoy! TTFN.

Eggplant Parmesan

Ingredients
2C seasoned breadcrumbs
1-1/2C parmesean romano blend cheese
4 eggs, beaten
2 medium eggplants, sliced 3/4" thick
2C+ Italian blend cheese
3C+ favorite spaghetti sauce
oil for frying

Preheat oven to 350

Dip eggplant slices in egg then into a mixture of the seasoned bread crumbs and 1/2 C of the parmesean romano cheese. Fry until golden brown and soft. Drain on paper towels.

Pour enough spaghetti sauce in the bottom of a 13X9 pan to cover and layer 1/2 of the eggplant. Layer with 1/2 the Italian blend cheese and 1/2 of the remaing parmesean cheese, as well as 1/2 the spaghetti sauce. Repeat, ending with the cheese. Bake for approximately 30 minutes, or until golden brown.

I tend to be a little heavy handed when it comes to the cheese and a little lighter on the sauce. I probably use that amount of sauce, if not a touch more and I know I up the cheeses some.

Great served with a Ceasar salad and fresh baked French bread.

Hi all! And a Happy Thursday to you!! I only have a few minutes for a quick post, as I'm potty training Baby Bubba. Yes, I'm sick of changing diapers. Who can blame me?! He is my fourth baby after all AND both of his sisters were potty trained before now! In fact, Eldest Daughter potty trained her self at 18 months. I so miss those days. I know Baby Bubba is young and a boy, but I can't wait any longer! TTFN.

It's Getting Closer

Hi all! Hope everyone is having a good week. Still trying to get on a better schedule with the little ones. I'm sure it will be much easier once we're not taking off random days for fun. What fun would that be, though?!

I can't believe the changing of seasons is fast approaching. I can even feel it in the air here. I know, I know it's still in the upper-80's here. If you're in the shade though, and you feel the breeze, it's cool. While I'm excited to debut my new fall wardrobe, I'm still not ready to let go of summer. I love hot, lazy days! Fall has it's good parts, like pumpkin and fall festivals, but that's really about it. I truly do prefer warmer weather and long nights outside. What about you? What season do you like? Or, do you like them all?

Happy Birthday!

Hi all! Today Eldest Son turns 11 and I'm so not ready for it. He's already telling me he's almost a teenager! Where has the time gone? Where is that little baby? The first little boy I held in my arms and stole my heart. He is my eldest, my first love, my first heartache. We have grown together and made our share of mistakes, mainly him, of course! :) Okay, I best stop this before I can't control the tears. I know I don't say it enough, but I'm so very proud of this young man and can't wait to see the man he will be. In the meantime, we'll make a Hummingbird Cake to celebrate the day and pizza tonight with his football team. Not too much else, as we took him on a trip last week and he went to the movies with his dad over the weekend. I still need to tell y'all about the trip -- delightful!!!

Just You Wait...

Hi all! Wow, has this been a week! Just got back from vacation yesterday to run to the dentist this morning. Now, I'm trying to get caught up with laundry and all the other basic tasks I have to do every day. I have to tell you about all I have coming up on the blog next week, I'm so excited!!! Goodbye Summer, Already?

Hi all! Happy day to you. Well, I know summer is fast coming to an end and it makes me so sad. How do I know this? Eldest Son had his first scrimage football game, which means the "real" games will be here before I know it. The team looks really good and they won the game. Go Falcons!! What also helped make it seem more like fall was the fact that it was rainy and gross and chilly. Oh so sad. Okay, so I know 80 is nowhere near cold, but it sure felt cold to us! One of the mom's was even wrapped in a blanket! No, it wasn't me. I was the mom with the three kids sitting her SUV when the rain was too much! What fun fall activities do you have planned? TTFN.

It's Time

Hi all and a Happy Wednesday to you and a very Happy 40th to our dear Shopaholic in Alabama!!! Hope this year is wonderful for you!

Something happened yesterday, that I thought would make y'all laugh. Baby Bubba is reaching the ripe old age of 20 months, understand, by this time, both girls were COMPLETELY potty trained! Well, Baby Bubba is a boy and isn't cooperating or is he just smater than they?! Yesterday I told him we needed to change his diaper and he went and got one for me. Okay, so he knows the words. That's enough to make me know he's ready, but then he decides to run into the living room and grab a pillow for his head. Yes, you read that right!! He wanted to make sure he was comfortable. All with the cutest smile on his face! So, now I'm trying to potty train him, as much as he has trained me!!! TTFN.

Hi all! Well, it's another hot week here, which seems to be the new standard. With all the heat, I haven't been baking as much and have even started using my crockpot more. Anything to try and keep the house feeling somewhat cool. Though it really doesn't matter the temperature, we have been doing a lot of grilling here which inspired me for this...

That's right, I'm hosting a grilling giveaway with these fun items. These are all from my personal stash and contain some of my favorite products that I think you will enjoy, too. Included are a chicken roaster pan -- you can put beer, wine or other marinades in it, a bottle of W ketchup (thank you to Entertaining Mom for introducing me to it!), a bottle of Smack Yo Mama BBQ sauce (I buy it every year at a Fall Festival), 3 different types of seasoning blends and a tomato relish.

My Hero

Hi all! Well, it's been a little rocky here, but I think we'll survive. It's always fun getting back into a school routine!! I just wish I could be as tough as my little hero here...

My poor Ittybit gave herself her first black eye the other day and is wearing it as a badge of honor. She tells everyone how cool it is and loves showing it off!! Not only would I not find it cool, I would be hiding under the covers worrying that everyone would find me ugly. I'm so proud this little girl has such confidence and realizes this is an outward symbol of her great strength. Now, will her great strength and wisdom wear off on me?! TTFN.

How Hot is It?!

Hi all, welcome to a new week, and month. Hope this finds y'all doing well!!! As you know, the two oldest started their classes today, so if you have a moment, please say a prayer for a peaceful transition back into our school schedule.

To start preparing ourselves for the fun of a new school year, I decided Friday was to be a day of eggsperiments and other eggsperiences!! Okay, so I'm not the funniest girl in the world, but my guys had fun. First, we went to our local egg farm and picked up our usual order -- a flat of farm fresh eggs. These truly are the best eggs and the best deal -- 30 extra large eggs for $2. Yes, we go through that many eggs every week! I also had a few store bought eggs here to use for comparison. We thoroughly went over our eggs and discovered how strong, and fragile, they can be, as well as finding out if eggs could float by follwing these experiments. We are also working on the "naked egg" experimemt. Simply put, you cover the eggs with vinegar and it "eats" the shell. This has been a lot of fun and watching the kids observe the differences between farm fresh and store bought has been fun -- I love when they really pay attention to detail. By the way, we have observed farm fresh eggs seem to have a thicker shell.

Now, how do we know it's hot here?! Well, we could simply turn on the local weather report or even step outside to roast, but Husband and I had a better idea. We discovered it's so hot outside you can...

Oh, yeah, we fried an egg!!! Well, I must be off for our new adventures in learning. TTFN!

Hi all and welcome to another fun filled weekend!! Well, at least everywhere, but at my house. The kids start back to school Monday and Eldest Son is none too impressed. Eldest Daughter, on the other hand, can't wait.

I know many of you must think I'm crazy having the kids start back to school so early, but it really isn't all that early here. In fact, our county schools start August 9th. Just wanted to let y'all know it may take some time for me to find the balance that works best for all of us and blogging may be a little crazy. Know that I'll do my best, but please cut me some slack for a couple of weeks!! Besides, I have a fun giveaway in the works I think y'all will enjoy that I will announce next week.

Oodles and Oodles of Snickerdoodles

Hi all! Hope your week has been going well. I'm still on my baking rampage, so last night, I made the following snickerdoodle recipe for the kids' swim instructors and for us, of course. I simply doubled the recipe and it worked out great. These are some of the best snickerdoodles I have ever tasted. These are the same ones I made for Eldest Son when he was away at camp and even one of his cabinmates said I was a better baker than his mom. Here you go...

Snickerdoodles

Cookies:
1/2 C butter, room temp
1/2 C shortening
1-1/2 C white sugar
2 eggs
2 tsp vanilla
2-3/4 C flour
2 tsp cream of tarter
1 tsp baking soda
1/4 tsp salt

Topping:
2 Tblsp white sugar
2 tsp cinnamon

Preheat oven to 400. Cream together butter, shortening, sugar, eggs and vanilla. Add the dry ingredients until incorporated. Mix the ingredients for the topping in a shallow dish or plate.

Roll rounded tsp sized pieces of dough into balls and roll in the topping. Pleace 2 inches apart on ungreased baking sheet.

Bake 8-10 minutes until just set. Leave on baking sheet for no more than 2 minutes and then remove cookies to a cooling rack. The cookies should be soft with a small crunch around the edges. Enjoy!!

The Evolution of a Family Picture!

Hi all! Hope you like the new header picture and, of course, it was taken by Ken Rada. What I want to do today is explain the evolution of this photo -- it was a year in the making!!!

It started when I found this jon jon online at In the Pink

Unfortunately, they only had it in a size 12-18 month and Baby Bubba was only about 5 months old, but I had to have it. I also found Eldest Daughter's shorts on the site (her top is from The Pink Paddock)

and, I believe, Eldest Son's shirt is from there, as well.

Then I found my pants at Belk in Atlanta, of course they were about 4 sizes too big, but I had to have them. Thank goodness for a GREAT tailor!! My top is from Lilly Pulitzer Southlake. Husband's shirt is from Under the Palm Tree and Ittybit's top is from Persnickity Palm, I believe.

So, a year and six Lilly stores later, we have a new family picture and header for this blog! Thank you to all who helped in this task. Did you ever think one picture could take so long and involve so many people?! ;-) TTFN.

Hi all! Hope your week is off to a great start. Well, last week ended on a great note, so I know this week will also be fun! I received these delightful Stephen Bonanno sandals in the mail on Friday, and just can't keep from salivating.

I love that I can wear them practically year round, save for those bitterly cold months!

Now, I'm thinking I need to order a pair of clogs in black and red for Eldest Son's football games and Eldest Daughter's cheering. Probably a pair like this

Time Machine

Hi all and a happy Thursday to you. Are you getting ready for another fun filled weekend? We have lots of football things to do and a photo shoot with our dear friend, Ken Rada. This works out perfectly, because Ken will able to document Eldest Daughter's newest accomplishment -- learning to swim!

Well, as you know, I've been driving kids all over towm to various camps and classes the past few weeks. Again, it's a good thing Husband bought me a much larger SUV. I promise, as soon as I get all the new "bling" for it, I will post pictures of it. Also have to wait for the road construction to be over, so I can get it washed!! But, I digress...

Yesterday, after dropping Eldest Son off at his class, I was all alone in this huge vehicle. I mean it was really quiet and I had no one to talk to, so weird. What to do?! Well, I was transported back to the late 80's in my magical time machine -- you thought it was only an SUV -- through the wonders of XM/Sirius radio. Gotta love the 80's station and Hair Band station. There I was, one second the conservative mom of four in her quintessential mommy car, the next I was all of 16 or 17 singing at the top of my lungs to music that was much too loud! I had to pretend I didn't see the two carseats in the back, but that was okay. It really was fun to have a few minutes to go back in time like that.

So, what do you do when you are alone in your car? I would love to hear! TTFN.

Football Weather?!

Hi all! Hope your week has been off to a good start. It's been crazy, hectic here -- oh well. It's hard to believe football season is already upon us. Which means our life is about to be even more out of control with football practices 4 days a week until school starts, then down to three nights a week. It may sound like I'm complaining, but, secretly, I love it!!! This year is going to be even more demanding with Eldest Daughter also cheering. Surprisingly, they only practice for about two hours a week and won't even start until school starts (somewhere around August 9). Prepare yourself for LOTS of fun pictures.

Well, need to get to some homework with the older two. I have them in reading/study skills courses and can't wait to see their improvement. Will let you know how that goes, as well. TTFN.

For Shame!

Hi all and welcome to another new week! Again, way too much happening here, but I know all will be well.

Last Thursday, one of the local news stations asked a question about marketing maternity wear to teenagers. I thought this had to be a joke, possibly a way to boost ratings. To my dismay, it turns out to be true!!!! Forever 21, a store that markets to teens and young adults, is launching a maternity line. What is happening?!

Back in the dark ages, when I attended high school, I never would have dreamed of the day when teen pregnancy would be glamorized. Okay, so it was the early 1990's and we were all afraid of AIDS and it was a parochial high school, still...

I remember there was one girl who did find herself "in trouble" and she was quickly sent away. She had the baby and gave it up for adoption, a tough choice, but right by the child. She did return the next year, but only for a few months. It seems her "secret" wasn't so secret and she was ashamed. Good for her! Where is the shame now?

We have been told our children can't play sports where scores are kept, where each child must have the same number of Easter eggs in their basket. Why? Where are the consequences for actions? It just keeps going. I'm truly scared to see what is next.

We've already glamorized having a baby out of wedlock, without a father to be had. Now, let's set the bar even lower and tell the young girls, hey look, if you get yourself knocked up, you can wear these really cute clothes!!!! Can you tell I have an opinion? This isn't good for our girls, this isn't good for our country. It's time we take a conservative stand and remind our girls this isn't right. It isn't all fun and games and, most importantly, there are consequences to our actions. I'm sure I'll receive some not so nice remarks, but I put this out there and accept that consequence to my action!

I understand this is simply a line of clothing, but I believe it to be totally unacceptable. Teens who find themselves in this situation, shouldn't be worrying about what looks cute and shows off their baby bump. They should be worrying about how to make sure their child ends up with the best care -- pre and post natal. They should realize the true consequences and relaize it isn't all about fashion, it's about a life!

For shame on Forever 21 for supporting such idiocy! TTFN.

Tomato Pie?!

Hi all and welcome to another fabulous Friday!!! Back at Easter, Lori from Shopaholic in Alabama posted her family's recipe for tomato pie and I was intrigued. We made it for Easter brunch and it was so very yummy. Well, with all the fresh tomatoes out, I decided I wanted to make it again, but couldn't find her recipe. So, I tried to remember what I could and also used Paula and Bobby (lighter recipe) Deen's recipes and this is what I came up with. Please do try it, as it's surprisingly good. This coming from someone who really isn't a tomato lover.

Tomato Pie

1 refrigerated pie crust (I used Pillsbury)

Good Parmesan/Romano Cheese blend

1-1.25 lbs fresh tomatoes* cut into slices

1/2 of a medium Vidalia onion cut into thin strips

10 chopped fresh basil leaves

1 Cup reduced fat mayo (I use Hellmann's Light)

1 Cup grated cheddar cheese

1 Cup Italian blend (I used Sargento 4 cheese Italian reduced fat)

A few drops of hot sauce

Bake pie crust according to box directions (Bake just until slightly golden, as it will be going back into the oven.) Take pie crust out of the oven and add Parm/Romano blend cheese to bottom -- enough to coat the bottom of the crust and let cool.

While baking pie crust, slice tomatoes and let drain on paper towels. Slice onion and chop basil leaves. Make topping by combining mayo, cheeses and hot sauce.

Preheat oven to 350.

Layer half the tomatoes, onions and bail in pie crust and repeat layers with the other half. Spread the mayo and cheese topping over top making sure to cover. Bake for about 1 hour or until lightly browned.**

Cut into slices and serve warm.

*Note: Be adventerous, go to your local farmer's market and see what variety of tomatoes they have for sale. Last time, I forget what variety I used, but the one tomato I used weighed about 1.25 lbs and was delicious!!

**Note: Most recipes say 30 minutes, but it seems like it always takes an hour for me to bake.

Bridal Cookbook

Hi all and happy Thursday to you! Boy has this week flown, probably because I haven't had a moment to rest. Y'all may remember my earlier post about being a stressed baker. That is, when I'm under a lot of stress, I bake. Well that still continues, but I've now found a way to help someone out.

At the beginning of spring, Lori at Shopaholic in Alabama and Bethany at Maryland Pink and Green hosted a spring gift exchange where I was partnered with Erica at Fashion Meets Food. It turns out that Erica will soon be getting married, like in a few weeks soon. Can you imagine the stress or do you remember the stress of those last few weeks before the big day? I know I still do. Well, Erica is throwing herself a virtual bridal share and is simply requesting a recipe or two for her bridal cookbook. I absolutely adore this idea, as I know I relied on my bridal cookbook for quite sometime, still even make some of the recipes! So, simply visit her blog and help the poor girl out! Praying Mantis Update

Blueberry Bonanza

Hi all! Today I thought I'd share a couple of recipes with you for some wonderful blueberry treats. My princesses love blueberries so much, we have even planted them a couple of bushes. The one we planted last year has given us enough berries to make both of these treats and the girls have been delighted. Can't wait to see what next year brings!!

Blueberry Muffins

1-1/2 Cups flour
3/4 Cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 Cup vegetable oil
1 egg
1/3 Cup milk
1 C fresh blueberries

Crumb Topping:

1/2 Cup sugar
1/3 C whole wheat flour
1/4 C almost melted butter
1-1/2 tsp cinnamon
*Mix the crumb topping ingredients together with a fork

Preheat oven to 400. Line muffin tin with liners or grease.

Combine dry ingredients in a medium bowl. In another small bowl, combine vegetable oil, egg and milk. Add wet ingredients to dry ingredients and mix. Lightly fold in blueberries. Fill muffin tins about 3/4 full and then top with the crumb topping.

Bake for 20-25 minutes or until done.

Blueberry White Chocolate Chip Cookies

2 Cups flour
2 tsp baking powder
1/2 tsp salt
1 stick butter at room temp
1 Cup sugar
1 egg yolk
1/4 Cup milk (possibly a couple more dashes)
2 tsp vanilla
1 Cup white chocolate chips
1 Cup fresh blueberries

In a medium bowl, combine first three ingredients. In another medium bowl, cream together the butter and sugar with a hand mixer. And egg, then milk. Stir the dry ingredients into the wet ingredients by hand and fold in the blueberries. Chill the dough in fridge for about 30 minutes.

Preheat oven to 375.

Drop by tsp onto cookie sheet and bake about 15 minutres, until golden around the edges.

Cool on a wire rack and eat within a few days.

These cookies are best eaten as quickly as possible, as they tend to get soggy after a few days. They are very much like eating a muffin top. For this recipe, I must give credit to Giada De Laurentis, as I used her Almond Blueberry Cookie recipe as my inspiration.

Friday Fun!

Hi all! Hope your Friday is off to a wonderful start! We're busy here, but what else is new? What scares me the most is starting next week we will be even busier!! Where will I fit it all in?! I'm sure I'll figure it out, but hope all of you have an understanding heart if I miss a day here or there.

How busy will I be? Well, Eldest Son has football camp during the day and Eldest Daughter has Cheer Camp in the evenings. There are also swimming lessons for the girls and, oh yes, Eldest Son will be starting a class one night a week, with Eldest Daughter to follow the next week. What was I thinking?! Thank goodness Husband bought me a Yukon XL, as I think I will be living out of it for the next few weeks!! I'll share pictures of my new bus soon, I'm just waiting on a couple of monogrammed treats from 2 Preppy Girls.

Well, now that I have exhausted myself just reading this, I'm off to "relax!" Sure, I am.... TTFN.

Hi all and happy Thursday to you! Just a few more days and another weekend will be here. I just love short weeks. What about you?

Well, it wasn't that long ago I did something similar, so I'm changing the rules up! Hope you have fun with this!! My Little Patriot!

Hi all! Hope your 4th was splendid! We had a lot of fun here, well except for Baby Bubba (in turn, myself) missing all the fireworks. Oh well, there'a always next year...

As you know, Eldest Daughter turned six on July 1st.

Just what could she be wishing?! She never told!

She received several gift cards. So, what does a good mom do? Take her shopping, of course! This momentous occassion, two days worth mind you, was caught on camera for the world to enjoy. This is big, Eldest Daughter finally got to sign her own name to a credit card purchase!!! Got to love Visa gift cards. The Stressed Baker

Hello all and a happy Wednesday to you. It's a little more busy here than ususal with Eldest Daughter turning 6 tomorrow and a few other things, but I really needed to post something today.

I'm sure you've been able to see I've been under a great deal of stress -- lucky for my family! Why? Because, when I stress I bake. So, my pain is well, there gain -- hopfeully not litterally! Lately, I've been baking up a storm -- anything from good old fashioned chocolate chip cookies and snickerdoodles to Bananas Foster French Toast (a kid friendly version, I made up based on the Williams-Sonoma recipe). For the French toast, I even made my own roll of French bread -- I do love my bread maker! Even made a maccaroni and cheese lasgna the other night for dinner. Boy, did that please the kids. This morning, I've already made sausage balls for the Husband and am planning on making blueberry cookies (with the blueberries the girls picked from our bushes) in just a little while.

So, what do you do when your stressed beyond your limit? How do you escape? TTFN!

Lack of Communication

Hi all! Hope all is with all of you! It's crazy busy here and I have too much on my plate. What's new?! I have so much I want to talk about, yet I don't know where to begin. Also, I was raised to not "air your dirty laundry." While I don't actually have "dirty laundry" to air, I have a lot I ~~need~~ want to say, but just can't find the words. Oh well, maybe someday. Don't worry, nothing is truly wrong. Just feeling overwhelmed, but know all will be fine.

Isn't that funny? I have an undergraduate degree in Communications, am a blogger and on many social media sites, yet I don't feel comfortable being completely open. Don't even think I'm completely open with any of my friends or family, probably not even myself. Odd. Wonder what I could discover. Do I really want to know?

Boy, I sound like a lot of fun right now, don't I? Sorry for this. Well, I hope all of you can be better communicators than I am today and will make sure to enter my stationery giveaway. TTFN!

Hi all and Happy Friday to you!! Eldest Son comes home today and the girls have a recital. A busy but wonderful day!! Before I move on, here are a couple of pictures of the princesses from Thursday...

After yesterday's rather long ~~rant~~ post. I thought today I would spotlight those who deserve the attention. These are people who know what customer service means, even with a ~~demanding~~ detailed person like myself!

1. 2 Preppy Girls I made a mistake when placing an order and they took the responsibility for MY error. They have adorable preppy gifts.

2. Bleu Bird Formerly of Twirly Bird Lane. She makes some of the cutest littel girl's clothes and is easy to work with.

3. Caroline Grace Jewelry Who else could put up with my precise, yet scattered visions for beautiful cuffs?! Boy does she have patience.

4. Goose Berry Lane Designs Formerly of Twirly Bird Lane. Another one with patience for my "vision" of cute clothing.

5. Ken Rada Photography The best photographer I know. If you're in or around Destin this summer contact him for beach pictures.

6. The Pink Giraffe Some of the cutest and preppiest gifts ever. They were SO helpful as I placed an internet order, while talking to them on the phone.

7. The Pink Paddock I just love phone shopping with them. I can call them and they tell me what I would want. They are NEVER wrong.

I would recommend you use any of the above, as they know what it means to treat a customer well! I love them all and hope you will, too!

Extortion is the Worst!

Hi all and Happy Thursday!! Tomorrow, Eldest Son will be home from camp!!! I can't wait to see him. Before I even begin today's post, just wanted to share this picture of the princesses from yesterday.

They so love Princess Camp! I'm sure they are going to be sad when it is over.

Okay, so on to the "real" post of the day...

I was the victim of extortion in the worst way!! Following is an excerpt from a letter I received from a photographer who photographed Eldest Daughter about three years ago for a children's boutique. I positively refuse to name this photographer, as I don't believe his name should be uttered. All I can say is I hope the $300 I gave him today will hold him over for eternity! He will NEVER see a dime from me again!!! Just to let you know, I have known said photographer for 10 years now and have used him on several occassions. No, he's not my favorite photographer, but he ran a close second. Well, until I received this...

After a short paragraph of when can I do a shoot of your family. He proceeded with this:

"I also wanted to let you know that we have updated our portraits at (children's boutique) and the portrait of (Eldest Daughter) is on hold in our studio. We currently have no display space, so before we discard the image just wanted to offer the portrait to you at the reduced rate of $295 and I will throw in the frame for free. I will keep the portrait until June 30th so let me know if you ar interested."

Okay, I'm a mom, so what do I do? Say, of course I want the now outdated, three year old picture. I most assuradely don't want her in the trash!!!! I call said photographer and say I will purchase, however as I'm not exactly next door, is there a way we can meet and exchange payment for the item. Oh no, he's NEVER anywhere but at his studio, I guess!! I drive the 40 minutes out of my way to get the portrait.

I have never felt so used in my life. He knew darn well I would pay for the picture at his "reduced rate." Why exactly is $300 a reduced rate anyway? Again, this picture is three years old AND has brought him business, WTH?!

This is how not to do business!!! Do NOT extort money from your clients, because I can assure you they will NOT come back. Not ever!!!

Okay, so I'm furious and just had to vent. I'm sure many of you can understand. By the way, the $300 portrait will be going in Eldest Daughter's room, as though it is an important part of her past, it's exacly that, a piece from three years ago, nearly half her lifetime ago!

Tomorrow, I will list some of the people who know the art of customer service. They deserve the praise and need to be recognized for their good work! I have wasted enough time on this photographer and wash my hands of him. Good luck and God bless. TTFN!

Hi all! As you know, the girls started Princess Camp yesterday and they really seem to enjoy it. I was amazed at all they were able to do in just three short hours. Of course, when the Fairy Godmother is in charge, a lot can be done. Yes, you read that correctly, they are being instructed by a "real, live" Fairy Godmother, as well as a couple of other princesses. It's so sweet to see all the little girls in costume and, even more amazing, to see the instructors dressed for the occassion. Here's what my princesses looked like yesterday:

Stationery Giveaway!

Hi all and welcome to the start of another new week!! Hope all is well with all of you. Well, here it is, the moment you have been waiting for... my stationery giveaway. Still haven't figured out what all will be included, but suffice it to say, it will be enough to write several beautiful letters to your own mothers! ;-) So far, I have gathered together the stamps and a set of 24 notecards with envelopes. Still need to go through my Lilly stash to see what I have to include. There will also be a snickerdoodle mix, as I believe these cookies will travel the best if making a care package. That's exactly what I'm doing for Eldest Son, except I'm making the cookies from scratch, but didn't think you would appreciate me sending you either really old cookies or just a recipe. So, by tomorrow I should have the bag together with a pretty picture for you to see.

Sunday, Sunday

Hi all and happy Sunday! It's a beautiful, although VERY hot, day here!! So how am I going to enjoy it? Well, wait until you hear this... I'm going to clean house!!! Now, who says I don't lead a very glamorous life?! I just have to get rid of some of this clutter before my cleaning fairies come next week. I love my cleaning fairies and wish they could come every day.

Tomorrow starts another busy week here. The girls will be attending Princess Camp during the morning, can't wait to share pictures from that, with an ending program on Friday. Friday is also the day to pick up Eldest Son from his camp! I have also scheduled appointments for me that I normally wouldn't have, because I'll be down to only one child for a few hours. That's going to be so weird!

Speaking of Eldest Son, his letters were very short, but I've heard from him and it sounds like he's having fun! Even received a note from his camp counselor. I truly did apprciate that, because we were able to get a little more insight. All in all, Eldest Son is doing well and learning to be more independent.

Since I've been ~~obsessing~~ discussing letter writing for what seems like forever, I decided y'all deserved a reward. Don't Blame Me, I'm a Mom...

Hi all and happy Friday! I thank you for induldging me as I suffer through this ridiculous pitty party. I promise today is the last post about missing Eldest Son, but must share this story with you. While it deals directly with said son, it has far more to do with the camp he's attending. Sadly, I don't feel comfortbale enough to tell you exactly where Eldet Son is, but wait until you hear how wonderful this place is. If you are looking for a camp for your young ones, please feel free to email me and I will privately discuss the particulars.

As you know, Eldest Son has been at camp since Sunday and I haven't heard from him. When, once again, there was NO letter in the mail from him today, I broke down. I acted like a real mother! I called the camp and ~~pleaded, begged,~~ asked them ever so kindly to have Eldest Son's counselor remind him of the importance of putting pen to paper and writing his mother! They were so kind to me and assured me that I was not the first, nor was I going to be the last person to call about a child's writing issues. Furthermore, they let me know that Eldest Son was adjusting beautifully. I figured that was the end of it and went about my day.

No more than an hour later, I had a message on my cell phone from the camp letting me know Eldest Son had been ~~sufficiently chastised~~ spoken to about the importance of letter writing. AND, not only had he written me a letter a few days ago, but one went in the mail today. Can you believe it? I'm really glad Eldest Son has been writing, but was really surprised about the camp's attention to my feelings. I mean seriously, they had already made me feel better, and yet, they went the extra mile to follow-up with me, again. Yay camp!!

P.S. The new adventure for the day was getting invloved in my county's politics. Husband and I have officially joined our political party's group in our county. We have always voted, and let our kids know how important it is, but we decided we need to be more involved.

You Know It's Bad When...

Hi all! Hope your week is going well. Mine is moving too slow AND I still haven't heard from Eldest Son!!! Thank God camp shares pictures every day, so I know he's still alive. That being said, I've only seen two pictures of him and one was of his backside!!! Oh dear me. Please understand, this is the first time he has been away for this long and I HATE not being able to talk to him!!! In case you haven't guessed, I have the gift of gab and a ~~want, need, desire~~ COMPULSION to communicate. Any wonder my major in college was Communications?!

I keep telling myself I haven't heard from him, because he is too busy having fun and truly do believe it. Still...

Okay, so how do I know I've gone off the deep end? At this very moment, I actually envy these two ladies, The Entertaining Mom and Bevy. Go read their blogs and you will understand the depths of my craziness! I misss the ~~chattering~~ bickering in my home and look forward to Eldest Son tormenting his little sisters. He doesn't pick on the baby, yet! Okay, when he does come home, I know I'll look back on this and ask "What the hell was I thinking?!" But, until then, I will sit her missing my boy and looking at the world in a new way. TTFN!

P.S. In case you're wondering, one of my new challenges was allowing the three youngest to fingerpaint. For me this a huge deal. I don't deal well with messes and paint on hands with a 5, 3 and 17 month old is horrifying to me. Isn't that why they have preschool?! We did surrvive the situation, with Daddy's help, as I had to leave the room. Okay, so I'm probably worse than Kate Gosselin when it comes to things like that. Please don't judge me too harshly...

It Has Begun!

Hi all! Hope your week has started off with all sorts of great opportunities. I thought the three kids here would keep me so busy that I wouldn't have time to miss Eldest Son so much, but I was wrong. Though busy, I miss him more than I could ever tell you. I know he's having the best time ever, it's just strange not having him here. I never realized how much I truly enjoy his company. This is going to be a good experience for both of us, our first of a year of new adventures.

I told Husband I wanted to try something new every day for the next year and made sure to tell him nothing crazy. He simply asked if I was going through a midlife crisis! To begin with, I still have a few more years before I even turn 40. Secondly, my new experience today was helping him with his work. The really crappy grunt work, at that. Yes, a typical midlife crisis includes opening bags and undoing twist ties on your family room floor with you family! Geesh!!! Oh well. I even considered putting aside this "crazy" idea, but realized this is too important to me.

I've always been one to put off things or never even contemplate doing them for one excuse or another and I have regrets. NO, I DON'T REGRET MY HUSBAND OR FAMILY. There are simply experiences I wish I would have had. Of course, having had them, I probably would have missed out on the life I have now. A life I wouldn't change for the world! It's simply time to expose my family and myself to what the world has to offer.

I told you yesterday, there will be no wild and crazy experiences for me. I like to play things safe, but I hope to discover new things about myself and family as we embark on this journey. I sincerely hope you will join us and support me through your comments. If you have any experiences you think I may enjoy, please let me know -- I'll try to be open.

The year of firsts has begun! Two days down and I've already realized that I love my family more than I ever thought possible and doing mind-numbing work with Husband isn't horrible. At least it's time spent together reaching a common goal. What will tomorrow bring? You'll just have to come back and see. TTFN!

A New Day... A New Idea

Hi all! Hope your weekend was wonderful. Husband and I took Eldest Son to camp (for the first time) yesterday, where he will be for the next two weeks. Not sure how I feel about it, but Eldest Son couldn't wait for us to leave so he could start his new adventure! I'm happy to see Husband and I have raised confident children. Still a tear or two isn't too much to ask, is it?! You see, I have had the same issues when Eldest Daugter and Ittybit both started preschool. While most of the other little ones were crying, mine were busy playing with toys and not wanting to give ME the last little hug I needed to walk out the door without them!

So, what am I to do with myself one child down? I think I have an idea and would love to run it past all of you. I think I want to write a book. A book about all the things I haven't done, but will try now. I would take the next year, and each day, try something new. Nothing too crazy -- no jumping out of airplanes or eating live bugs for me. Simple things, like rock climbing or trying sushi. Maybe y'all have ideas I haven't even considered. What do you think? Would it be something you would read? Should I blog about it? Please let me know, I really do want your input.

Well, while I may be one child down, I still have three kids who are five and under here, so I better get to their needs. TTFN!

Now Mommy's Got Shoes!

Hi all and a happy weekend to you!!! Figured I'd keep going with the shoe theme and tell you about the sandals I just ordered. No, these aren't your average sandals, these are Stephen Bonanno Sandals and they are custom made. Go check out their site to see all the beautiful color combinations you can make for these wonderful monogrammed sandals. Since I live in the South, I went with the chanel base and black whipstitch combination, so I can wear them most of the year. Well, at least until my poor toes turn blue from the cold!

Better still, I found them on sale at The Pink Giraffe in Nashville, TN. (You can also find them on Twitter and on Facebook.) In fact, ALL of their monogrammed sandals and flipflops on sale!!! Even with shipping, I still paid less than retail price. Yay!! They were so very helpful when I called to ask a million questions and helped me to place the order via their online shop. That way, nothing gets lost in translation. Now, I just have to sit back and wait ever so patiently for the next four to six weeks and you know how patient I am. Baby's Got Shoes!!

Hi all! Hope your Friday is wonderful. It's raining and dark here. Boo! I know I haven't been the best at keeping up with this blog, but I hope you'll forgive me. I've just been so overwhelmed with all sorts of things. Okay, enough of my pitty party!

Last weekend marked a very serious note in a young person's life. The baby finally got his first pair of shoes. Okay, you know me, he actually got six pairs of shoes. In my defense, some are for next fall and he does need dress shoes for special occassions AND his brother found him a pair of Timberlands that matched a pair he had. So see, it IS NECESSARY.

Memorial Day

Hi all! Welcome to the start of summer!! Yes, we all love a good BBQ and trip to the beach, lake, park, etc, but we need to remember to keep this day special in our hearts. Memorial Day is the day to remember our fallen heroes, our brave military who have died protecting this great nation! For a more thorough history of Memorial Day please check out this site, as it had some fascinating information. Just wanted to take a moment to remind us all how very important Memorial Day is.

If any of you are in the military or have family in the military, I'm incredibly grateful for all of your sacrifices for my family and the entire country! May God bless each and everyone of you!! And for all the soldiers who have gone before us, a very special thank you for your incredible generosity to your country -- I know God has already blessed each of you, as he met you.

Happy Birthday Mom And The Winner Is...

Hi all! Today is the day, the big, big day. Yes, you know it, my mom is now officially 30!!! Not what you were thinking? That's okay. You want to know the winner? Well... wait, hold on. Mom wasn't able to come over today, but did help me out with the little ones yesterday, so we surprised her,

In case you couldn't tell, Mom just loves her flamingos! Doesn't the bakery do a fab job?! I ALWAYS use them for all my bakery needs.

Trying to Figure "It" Out...

Hi all! For the past 36 days I've been reading "A Purpose Driven Life." I've had it for years now, but just haven't been able to devote the time it deserves, or so I thought. More likely, I lacked the discipline or just wasn't open to what I needed to learn. I'm glad I've waited until now, because I am open to what it says and, even more importantly, have been able to share some moving passages with others who needed the encouragement. What has been learned, you may be asking. Simply put, it isn't all about me, my wants, my needs. It's about what I can do for others.

This blog was started as a way to express myself, my creativity, and will continue to be used for that, but there is so much more happening with it. I may not be as popular as some of the other bloggers (which made me feel inferior for a while), but I am building relationships and able to help people in so many ways. It makes me feel good to be in the background connecting people and helping them to reach their potential. That is what it is about. I'm not going to list my "good deeds," as they are not important. What is important, is focusing on what can be done for others. Does that mean I let others walk over me? Heck, no. I'm a strong woman. It's just I've realized my strength comes in the form of being in the background. The one quietly getting it done.

Just wanted to share this little piece of my heart with all of you. Are you trying to figure "it" out? Do you know where you are going? What are your strengths? TTFN!

Here is a little information about the wonderful designer, Tami Cicale. She has always had a love for design and creating unique spaces and that passion translated into jewelry design about a year ago after attending a party where everyone was buying the same overpriced pieces. She started by taking jewelry making classses and her passion has grown from there. Her pieces incorporate only the highest quality materials: stones, gems, crystals and metals. Best of all, she only makes one of each piece -- they are all ORIGINALS! She has shown and sold her work in the Maryland/ Washington DC area, Florida and New York and is now expanding her clientele via the Etsy community. You can check out her site HERE. To me, what makes her even work even more amazing, is she has a full-time job, is a wife and a mommy. Kuddos to anyone who can balance it all and put their creative energy to good use!

Lazy Days of Summer?

Hi all! Hope this finds all of you doing well. Crazy busy here! Today is Ittybit's last day of preschool and Eldest Son may actually finish 5th grade today -- we'll see. I've never seen anyone take so long to finish up a year!! I think his head is already on summer break, so getting him to finish up these last three exams is darn near impossible!!!

OMG! Where Did the Day Go?

Hi all! Didn't I just wake up? How can it already be late afternoon?! Argh! Now that it's getting close to making dinner time, I only have a few moments to share a couple of things with you. First of all, here is a great link to The Life of a Suburban Princess and her monogram giveaway. You must check it out!!

Also, I found the cutest site for sending the most adorable email stationery! Please check out Paperless Post. In fact, I just sent a friend a gorgeous thank you email and didn't feel too guilty that it was "only" an email. You can design the cards and the envelopes, etc. They also offer email invitations, as well as other stationery. While not the same as putting pen to paper, it is far better than a plain email. I know some of my friends would just love to receive letters only this way! Think of how green you could be.

Please don't forget that starting tomorrow Fabulous Fun Finds will be starting their silent auction to benefit her sister's family which lost their daughter to SIDS in March. As I said yesterday, I'll be bidding! Also, don't forget about my giveaway that ends on May 18. Click HERE for the details!

Marvelous Monday

Hi all! Hope your weekend was wonderful and, for all my mommy friends, I hope your Mother's Day was fab. Eldest Son made me the cutest chocolate frogs and we got some new furniture to go out on the deck!

Sorry for thr poor quality of the picture.

In case you didn't know, I LOVE frogs!! Actually, that's an understatement. Hey, new blog idea, how to incorporate frogs into almost everything! Luckily, Lilly Pulitzer helps feed into my ~~obsession~~ collection. Maybe I'll do this later in the week. I'm also planning a post about prep scool with plenty of pictures of what I wore in high school. Just haven't had the time to get all the memorabilia out.

One Month and Counting

Hi all and happy Friday! Hope you have some wonderful plans for your weekend. Husband has to work Saturday morning, but I'm hoping we can fit in some fun. Don't forget to come back here on Sunday for the start of my give away in honor of my mom's 30th birthday! ;-)

Well, it's official, in just over a month Eldest Son wll be going to his first ever sleep away camp for almost two weeks. I'm so happy for him and know he will have the time of his life! I just wonder what it will be like without him here for so long. Will he remeber me?! For those of you who don't know, I have chosen to home school my children so I'm with them practically 24/7. It's going to be strange to only have three kids here. To add to the quiet, the girls will also be attending Princess Camp one of the weeks for about 3 hours a day, then I'll be down to one kid. How strange!!

Please, if you know me personally, never let on to Eldest Son that I have my worries. I never want to ruin this experience for him. This is good. It is time for him to flex his newly formed muscles. (By the way, he is enjoying weight training.) It is time for him to explore some of the world without either Husband or I by his side. It's just going to be different. We will both grow from this experience.

Luckily, this camp offers a service where they will be posting pictures daily. So, hopefully, I'll see Eldest Son's smiling face each day. I'm excited to see and hear all about his new experiences. I'm going to pack a journal for him and hope he'll write a little in it each day. I don't want him to forget the neat things he does and, if he would like, I hope to share some of it with you. We'll have to see.

Well, I better stop writing, as I already feel the tears starting. What can I say, I have a hard time letting go. I'm excited for this new journey for him, but saddend that I won't be right by his side. Well, at least not in person. He will do well and tell me all about it and that's all I can ask. TTFN!
